With the theme being “Tales and Legends of Greece” for the Global Pastry Chef Challenge in Thessaloniki, I wanted my Gateau to reflect the theme as well with the Owl as an extension of the Cake. The cake reflects the mechanical part of the owl.

Under the watchful eye of Athena’s owl sits our beautiful chocolate gateau. The gateau contains six unique and flavorful layers consisting of an exotic ginger cremeux, lime sponge, pineapple compote, one more layer of lime sponge with a crispy bottom, all enclosed within a rich chocolate mousse shell.”

The artists at Chicago Culinary FX thoroughly enjoyed working with Chef Stephan Schubert on this ambitious project. Chef gave clear direction and our team created a models and molds to make chef’s job at the competitions much easier. With so much to focus on in competition, every second and action counts! It was our pleasure to be able to be of assistance to Chef in his remarkable presentation. Can’t wait to see what he’ll do next!
